A tasty, quick and easy one-pot beef taco pasta with plenty of melted cheese!
Ingredients: 1 pound ground beef, lean or extra lean,1 medium onion, diced,2 cloves garlic, chopped,2 tablespoons taco seasoning,2 cups water (or beef broth),2 cups salsa,8 ounces pasta (gluten-free for gluten-free),1 (1.5 ounce can) black beans, rinsed and drained (optional),1 cup cheese (cheddar and/or monterey jack, mozzarella, etc.)
Instructions:
- Cook the ground beef and onion in a large sauce pan until the meat is browned and the onions are tender, about 10 minutes, before draining off any excess grease.
- Add the garlic and taco seasoning and cook until fragrant, about a minute.
- Add the water, salsa and paste. mix, bring to a boil, reduce the heat and simmer until the pasta is cooked, about 8 minutes.
- Add the black beans and cheese and coo unitl it melts, about 2 minutes.
