Ranch-Style Tacos

Serve this Tex-Mex ranch-style taco filling made with ground beef and ranch beans in crispy taco shells or spoon it over tortilla chips for a nacho-like dinner. You can easily make the filling ahead of time and reheat it before serving or keep it warm in a crock pot. You can even serve this as a dip with tortilla chips or make it into a taco salad.

Ingredients: 1 pound ground beef,1/2 cup chopped onion,salt and pepper, to taste,1 tablespoon mild or hot chili powder,1 can ranch-style beans, undrained,1/2 cup French salad dressing,1 small tomato, diced,1/2 cup water,To Serve,1 package taco shells or large tortilla chips,shredded lettuce,chopped onions,diced tomatoes,shredded Cheddar or Monterey Jack cheese

Instructions:

  1. Heat a large skillet over medium heat.
  2. Add the ground beef and onion and cook until the meat is no longer pink.
  3. Drain off any excess grease. Stir in the salt, pepper, and chili powder.
  4. Add the beans, French dressing, diced tomato, and water. Stir to combine and let simmer for 15 minutes uncovered, stirring occasionally. To serve: spoon the beef mixture into taco shells and top with shredded lettuce, onion, tomatoes, and shredded cheese. Or to serve “nacho” style, spread large tortilla chips out on a platter and top evenly with the beef mixture. Top the beef with the shredded lettuce, onions, tomatoes, and cheese as desired.
