Serve this Tex-Mex ranch-style taco filling made with ground beef and ranch beans in crispy taco shells or spoon it over tortilla chips for a nacho-like dinner. You can easily make the filling ahead of time and reheat it before serving or keep it warm in a crock pot. You can even serve this as a dip with tortilla chips or make it into a taco salad.
Ingredients: 1 pound ground beef,1/2 cup chopped onion,salt and pepper, to taste,1 tablespoon mild or hot chili powder,1 can ranch-style beans, undrained,1/2 cup French salad dressing,1 small tomato, diced,1/2 cup water,To Serve,1 package taco shells or large tortilla chips,shredded lettuce,chopped onions,diced tomatoes,shredded Cheddar or Monterey Jack cheese
Instructions:
- Heat a large skillet over medium heat.
- Add the ground beef and onion and cook until the meat is no longer pink.
- Drain off any excess grease. Stir in the salt, pepper, and chili powder.
- Add the beans, French dressing, diced tomato, and water. Stir to combine and let simmer for 15 minutes uncovered, stirring occasionally. To serve: spoon the beef mixture into taco shells and top with shredded lettuce, onion, tomatoes, and shredded cheese. Or to serve “nacho” style, spread large tortilla chips out on a platter and top evenly with the beef mixture. Top the beef with the shredded lettuce, onions, tomatoes, and cheese as desired.
