  • 2-1/4 cups fresh raspberries
  • 4 teaspoons sugar
  • 1/4 cup apple juice
  • 2 tablespoons red white wine vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon dried thyme
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 tablespoon canola oil
  • 1 tablespoon butter
  • Extra fresh raspberries, optional

Directions

  • Place raspberries in a small bowl; spray with sugar and mash.
  • In a small bowl, integrate cornstarch and water until smooth; gradually stir into raspberry juice mix till smooth.
  • Flatten chicken to 1/4-in.
