I’m a believer in utilizing lots of mayonnaise in this pimento cheese. Stinting the mayo makes the spread too thick for my tastes. Utilizing light mayo will ease the may0-guilt, and the taste doesn’t suffer.
Active ingredients: 1/8 teaspoon cayenne pepper,1 cup light mayonnaise, Newly ground pepper,7 ounces sliced pimientos, drained,1/ 2 teaspoon salt,16 ounces sharp cheddar cheese, grated,1/ 4 teaspoon sugar
Directions: In the bowl of a food processor, include grated cheddar cheese, mayonnaise, pimientos, salt, sugar, and cayenne pepper. Process up until well-combined. For smoother texture, process for longer. Add newly ground pepper and salt to taste.
