Whiskey Sliders and a Note for Hubs for Fathers Day #SundaySupper

A simple and delicious recipe for whiskey sliders cooked in a skillet. This recipe will become a family favourite!

I thought I’d do something a little different today.

First you get these amazing Whiskey Sliders, cooked with lots of caramelized shallots and onions. They are amazeballs and you are going to love them! I guarantee they will become a family classic you make over and over again.

Second you get the distinct, or horrifyingly way too personal, pleasure of me letting you into my personal life. Hubs is out-of-town for Fathers Day so I thought I’d share this here as a surprise and homage to him. You’re welcome. Don’t be scared.

A Note to Hubs:

It blows big time that you have to work on Fathers Day. Not only work, but out-of-town so we can’t even celebrate with you.

So here’s what we did. Cuz we love you, and well, it’s just good fun.

We made these amazing Whiskey Sliders for you.

Then we may have eaten all the Whiskey Sliders.

Okay for the “real” note now that I’m done pulling your leg.

A Note to Hubs:

I realize it took me having a mental collapse of epic proportions to see life clearly. And lots of drugs to realize the only time I’m not stoic is while I’m on drugs. The irony of it all.

If I’ve learned anything this year it’s that you are there when the chips are down. When I needed rescuing from the trip from hell you hopped on plane in 2.9 seconds to save us. That shocked me but shouldn’t have. When I lost my ever-loving mind after B-Dude moved out you held things together here till I regained my composure. That shocked me but shouldn’t have. When I got sick and needed help you were the one who made sure I got it. That shocked me but shouldn’t have. When I announced our big trip to Florida when I was too sick to go you supported my decision and helped me get there and back. That shocked me but shouldn’t have. When I needed a copilot for a weekend trip on short notice you dropped everything to be that person. That shocked me but shouldn’t have. And when I had an epic breakdown this past week because life got to be way too overwhelming you were the one who tried to make things okay again. That shocked me but shouldn’t have.

I think hard times make a person forgot to appreciate things in their life. It makes you cold and less aware of appreciating what you have. You get so caught up in what you’re struggling to keep and hold on to. Then one day you wake up and realize you are holding on to all the wrong things. It’s the people in your life that are important. People like you.

The one who drops everything to hop on a plane to save us.

The one who picked up the pieces when our first hooligan moved away.

The one who took care of me when I was too sick to take care of myself, or anyone else.

The one who drove me to my dreams and back.

The one who dropped everything on a moments notice.

The one who picked up the pieces of my mind when I lost them.

It should never shock me that you are this person. You’re also the one who:

Was my best friend for what seems like a life time.

Gave me the courage to leave an abusive relationship at a crucial time in my life.

Dated a gal who was pregnant. (seriously people, this is not made up!)

Was in the delivery room to be there when that child was born.

Raised and adopted that child and never once treated him like anything but your own.

Brought our little gal into the world and let me monopolize her time, never complaining once cuz you knew why.

Has been there through all the bad times, and man there have been some bad times.

Never gives up on me, even when I sort of give up on myself.

So thank you for being you. We drive each other nuts and life is not perfect. But I wouldn’t trade it for anything in the world.

I will likely continue to be shocked by you. Only because of my own insecurities of not thinking I deserve that kind of devotion. You deserve for me not to be shocked but I’m not quite there yet. Life is a journey and I’m not quite done mine.

I’d say “you complete me” but you know that would make me hurl. I can only go so far today before I lose my lunch. Baby steps man, baby steps.

I love you.

And thank you for continuing to shock me…

and support me…

in every way!

Okay so back to our regularly scheduled post.

If you’re all done hurling over that.

Fathers Day is on hold for us this year. We’ll be celebrating it on Tuesday when Hubs gets home from work. This is what happens when you live in one place and your hubs works in another. It’s a constant juggle. Hopefully one day we’ll live in the place he works and life will calm down. For now we do the best we can.

And speaking of doing the best you can, if you’re looking for a recipe that will knock your dad’s socks off at the last-minute, well, this ones for you. And I get bonus points for the use of a serious run on sentence. Score!

This recipe is slightly tweaked from The Pioneer Woman. These caught my eye  while I was visiting her site eons ago and this is about the 189th time I’ve made them. Okay, total lie, it’s more like 9 but that didn’t sound as impressive. Whatever. Make these now. Do it. You will thank me. And Ree. And butter. Cuz butter rules the world.

A simple and delicious recipe for whiskey sliders cooked in a skillet. This recipe will become a family favourite!

Ingredients

  • 2 pounds of lean ground beef
  • Salt and Pepper to taste
  • Chili Powder to taste
  • Garlic Powder to taste
  • 4 tablespoons butter
  • 1 cup diced shallots
  • 1 cup diced sweet onion
  • 2 tablespoons good quality balsamic vinegar
  • ¾ cup of whiskey use beef broth if you do not use alcohol
  • cups of good quality BBQ sauce
  • 12 mini burger or slider buns

Instructions

  • In a large bowl combine your meat and spices. Mix by hand (or spoon if you’re squeamish) until the spices are mixed in. Do not over mix, it will make for a yucky burger if you over work the meat!

  • Shape you patties into small slider size burger. Indent the middle of one side on each one slightly.

  • In a large cast iron skillet over medium heat (or 2 small ones if need be) bring your butter to nice melting point, then lay your burgers inside. Although to cool for about 3 to 5 minutes on each side. You want them browned but not cooked through.

  • Take the sliders out and place them on a plate for the time being.

  • Drain some of the fat if there’s a lot. I used lean so I had no need to drain it out. You want a little in the pan.

  • Pop the shallots and onions into the pan and splash them with a touch of balsamic vinegar. Now start to brown them over that same medium heat. Stir often to avoid sticking. They should be ready in about 3 to 5 minutes depending on your heat and pan.

  • Now pour in the whiskey very carefully. Remember it’s alcohol so you don’t want to start a flame. Turn off the burner if you’re nervous, then pour it in and turn the burner back on. I use a gas stove and I left mine on but I am super careful while pouring it.

  • Now allow that whiskey (or broth) to come to a nice boil and let it reduce by about half. Only take a few minutes to happen.

  • Now you can add the BBQ sauce to the pan, stir everything till it comes together.

  • Now reduce the heat to a nice simmer, and pop your sliders back inside the pan. You want them to cook in that while it bubbles up and thickens. Wait about 4 or 5 minutes, then flip over. Cook according to how you like your meat. I’m a well done gal myself so this took about 8 to 10 minutes at a slow bubble. You don’t need to cover it. Just keep and eye on things.

  • Once it’s done take a separate pan and slap some butter on each bun. Turn them butter side down on the pan or griddle and let them brown up. This is optional, if you don’t like your buns toasty that’s cool. No judging here.

  • Now take your bottom bun and slip a slider on it. Take some of the shalloty-oniony dripping and just slather it over top of the slider. Place the top bun on.

  • Serve with a big old spicy slider smile!

Seriously man, you would eat them all up before your hubs got home too. Look at these freaking things. They are incredible.

For all of you out there today who have your dads nearby make sure you hug them extra tight. I lost my dad to cancer years ago and Fathers Day has never been quite the same. So trust me when I say don’t let little moments pass you by.
