Tuscan Grilled Ribeye

Have I ever told you how much I love family? For the longest time Mike and I were living in the Lone Star state by ourselves, no family around whatsoever. But with some hard work, lots of begging and pleading, and a baby later we finally convinced my brother, my husbands parents, and my husband’s brother & sister-in-law to move our way. Things really are better in Texas and it has been awesome to have them around. What a blessing for my son to play with his cousins, have dinner with his Uncle and Aunt, or have Grandma and Grandpa watch him for the night so mommy and daddy can have a date night.

The other night my sister-in-law, Mackenzie from Cheerios & Lattes, invited us over for a “Family Grill-Off Challenge”. Usually when we get together it involves food of some sort because we both LOVE to cook and while we are making the “comida” our husbands are watching the boys.

The steak of choice? Walmart’s USDA’s Choice Premium Steak. The Mission? Create 1 Sweet Steak and 1 Savory Steak. She ended up creating this Dr. Pepper Marinated Flank Steak, which was absolutely amazing! I would have never thought of using Dr. Pepper as a marinade for steak, but it totally worked. It actually tenderized the steak and gave it a great sweet flavor. Since Mackenzie did the “Sweet Steak” it left me in charge of the “Savory Steak”.  I decided to do a Tuscan Grilled Ribeye, since Ribeye is one of my favorite cuts of meat.  It had freshly chopped rosemary, garlic,  and a little balsamic vinegar, which caramelized on the Ribeye when it was grilled. (my mouth is watering as I’m writing this….soooo good) Both of these were absolutely awesome, the Grill-Off Challenge was a blast, and the kids had so much fun playing together.  But my favorite part about this little Challenge we had was getting to know my sister-in-law more. Mackenzie has a very generous heart, loves the Lord, and is a great mom and I am so blessed to her as a sister-in-law. She definitely brings out the best in me.

As for who won the challenge? The winner couldn’t be decided (nor needed to be decided) as one dish was sweet and the other was savory. It was the perfect Steak dinner combo!!

Now… onto the recipe for this awesome Tuscan Grilled Ribeye. To get started you will need 2 Walmart USDA Choice Premium Ribeye Steak at room temperature.

Chop up 1 1/2 T. of fresh rosemary and mince 2 garlic cloves.

Now its time to season the Ribeyes, add salt & pepper to both sides. Evenly spread the rosemary and garlic on both sides. (be sure to press the rosemary and garlic into the steaks so that they really absorb the flavor)

Add 1 T. of balsamic vinegar and 1 tsp. of olive oil to each side of the steak.

Put them in the refrigerator and let marinade for 15 minutes.

Place Ribeyes on a grill at medium heat.

Grill each side for 5 minutes (for medium rare).

For the “steakhouse” grill marks like the picture below, rotate steak 90º 2 minutes into grilling.

Remove from grill and let stand for 5 minutes. Top it off with a squeeze of fresh lemon juice. (it brings out all the flavors from the steak!)

  • 2 Walmart USDA Choice Premium Ribeye Steak, at room temperature
  • 1 1/2 T. fresh rosemary, chopped
