All the flavors of your favorite Greek Salad with a healthy, high protein twist!
Ingredients: ¼ teaspoon black pepper,1½ cup cannellini beans (drained and rinsed if canned),1½ cup chickpeas (drained and rinsed if canned),1½ cup red kidney beans (drained and rinsed if canned),1 teaspoon dried basil,4 ounces crumbled feta,2 cloves chopped garlic,½ cup kalamata olives, halved,1 bunch lacinado kale, large center stems removed, chopped into 1-inch pieces,½ teaspoon kosher salt,½ teaspoon onion powder,1 teaspoon dried oregano,½ red onion, thinly sliced
Instructions: Combine all of the dressing ingredients in a blender. Pour over the kale, and massage with your hands.,Add the remaining ingredients, and toss to combine.
