As I sit here and compose my tri-weekly recipe post today, a few things have taken place:
1. a black feline is sitting by my back entrance and has started meowing. #eerie
2. Also, a spider the size of a squirrel came crawling out from under my range. induce vomiting now
My spouse concerned my rescue and eliminated the spider haha, sucker!, thus frightening the feline away.
And hence concludes another chapter in the book “I actually would die without him”.
What is the deal with the animal kingdom today?
THEY ARE TRYING TO KILL ME.
Yes, I understand spiders aren’t animals per say, however when they are the size of rodents, I think they can make the crossover.
There are few things I dislike more than spiders and snakes. Mayyyybe sweet pickles, however that would be pressing it.
And now my entire body feels itchy since all I can consider is that spider crawling all over me.
YOU MEN. That is like the meaning of heebie geebies! Gross gross gross. Someone stop the madness that is my life.
Ok, and now comes my weak effort at altering topics.
I know I simply stated spiders and vomit, however lets talk pizza for a hot 2nd, shall we?
I made this pizza and ate the entire thing with my other half for dinner 2 night earlier. #notashamed It was covered in veggies so it was entirely appropriate. I stated it serves four in the dishes which it totally could, but my husband and I just happened to be starving. And this ran out this world tasty which made it tough to stop pushing into my pie hole.
I understand I say that for a great deal of things, particularly carbs, carbs with sugar, carbohydrates with cheese, etc. however I. … have an issue.
If consuming carbohydrates is incorrect, I don’t want to be.
Moral of the story: make this and DO NOT share. Spiders make me want to punch somebody in the throat.

Here’s how to make it:
Grab about 1 pound. of pizza dough and spread it onto a baking sheet sprinkled with cornmeal. Spread out some sweet chili sauce over the whole thing … as much or as low as you ‘d like.
Then leading with grated cheese and some cubed chicken. I had this left over from a previous supper. Pop into a hot oven and let ‘er rip.
While that is cooking, chop up some peppers, carrots, green onion and cilantro.
! Make a sweet peanut sauce too! Basically, you just measure whatever out and stir.
Do not forget the salt and peppah!
Soooo, right about now the pizza ought to be hot and bubbly! Pull it from the oven and top with your veggies and sauce.
Last thing to do is top with some sliced peanuts and serve!

Thai Chicken Pizza

Ingredients
- 1 dish fail proof pizza dough
- 1/3 cup sweet thai chili sauce
- 2 cups grated mozzarella cheese
- 1 cup precooked grilled chicken cubed
- 1/2 red bell pepper diced
- 2/3 cup julienned carrot
- 2 green onions chopped
- 1/4 cup chopped cilantro
- 1/4 cup chopped salted peanuts
for the peanut sauce:
- 2 tablespoons 100% natural peanut butter
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- salt & pepper to taste
Directions

Preheat oven to 500 degrees. Sprinkle baking sheet with cornmeal and set aside *.

Spread pizza dough onto baking sheet. Spread dough with thai chili sauce. Top with grated cheese and chicken pieces. Bake for 8-10 minutes or until hot, brown and bubbly.

While pizza is cooking, prep veggies.

For peanut sauce, whisk all components together till smooth.

Top pizza with ready veggies and drizzle with peanut sauce. Sprinkle with peanuts, cut into slices and serve.
