Thai Beef Salad

With a head start from deli roast beef and a bag of greens, dinner’s on the table in 15 minutes.

Ingredients: 4 teaspoons canola oil,1/ 4 cup gently loaded fresh cilantro leaves,1 tablespoon lime juice, Lime wedges, if desired,1 tablespoon reduced-sodium soy sauce,1/ 4 cup lightly loaded fresh mint leaves, if wanted,1/ 2 teaspoon crushed red pepper flakes,6 oz very finely sliced reduced-sodium roast beef (from deli), cut into thin strips (about 1 1/2 cups),1 bag (10 oz) ready-to-eat romaine lettuce or blended greens,1 teaspoon sugar

Instructions: In little bowl, mix oil, lime juice, soy sauce, sugar and red pepper flakes., In big salad bowl, layer lettuce, cilantro and mint. Set up beef strips on top; drizzle with dressing. Toss just before serving. Serve with lime wedges.
