This marinaded cucumber salad might not be quicker or easier to throw up. Super easy, delicious & healthy, it’s best for casual summer feasting.

This cucumber salad is one of the recipes that remind me the most of my mama.

But despite the fact that she didn’t like cooking every day, there were times when she would whip up the most tasty meals and my siblings and I couldn’t get enough. She also had numerous fail-safe dishes that she would draw on when inspiration was running low and her finest cucumber salad was among those.

My mama’s cucumber salad dish wasn’t as chunky as my variation. She grated the cucumber and onion that made the best accompaniment to many meals however I prefer a little more texture in my salads. The tastes are exactly the very same though and I can honestly say there aren’t many salads that are as quick and simple to whip up while providing such a flavor punch

I love it for the fact that its the kind of salad I can make anytime since I pretty much always have the active ingredients on hand.

The almost-pickled nature of this cucumber onion salad makes it ideal to serve with abundant, fatty grilled meat and it’s completely delectable alongside a spicy curry (or my Indian-spiced lamb chops). It’s an ideal braai or barbecue side dish so PIN IT FOR LATER!
