These shrimp couscous packets with avocado mango salsa are the perfect toss it together dinner. All you need to do is cover everything up in foil, bake or grill and top with salsa. Easy and absolutely delicious! Prepared in under 30 minutes!
Ingredients: 1 medium avocado – diced,8 cups child spinach,1 cup couscous,1/ 2 cup chopped fresh cilantro – divided,1/ 2 jalapeño pepper – seeded and carefully chopped,1 tablespoon fresh lime juice,2 large mangos – peeled and diced,1 tablespoon extra-virgin olive oil,1/ 4 cup chopped red onion,3/ 4 teaspoon salt – divided,1 teaspoon Badia Tropical Sazon *,1 pound medium shrimp – shelled and de-veined,1 medium tomato – diced
Guidelines: Preheat oven or outside grill to 450 degrees., Combine couscous with water and set aside., Integrate shrimp, garlic, cilantro, additional virgin olive oil, coriander, kosher salt, cumin, crushed red pepper flakes and black pepper. Stir to combine., Using cooking spray coat inside of 4 18- inch long pieces of foil. Place 2 cups spinach in center of each piece of foil., Divide couscous and shrimp uniformly among packets., Fold foil to close and crimp edges to seal; put onto a cookie sheet and contribute to oven. Cook until packets are fully puffed, 10 – 12 minutes., Serve warm with a scoop of salsa on top.Instructions: Combine all ingredients in a medium sized blending bow. Stir up until completely combined. Serve over the shrimp.
