Ingredients: 2 Tbsp. balsamic vinegar,3 lbs. beef stew meat,4 cups beef stock,1 14- oz. can stewed tomatoes,6 carrots,4 stalks celery,2 tsp. dried thyme,1/ 4 cup fresh basil,1/ 4 cup fresh parsley,6 cloves garlic,2 Tablespoon. Extra-virgin olive oil,2 Tablespoon. fresh oregano,1/ 2 tsp. paprika,1 large red onion,4 red potatoes, Salt and pepper to taste
Instructions: Heat olive oil in large pan on the stove., Mince onion., Add onion and beef to pan and brown meat on all sides., Mince garlic and add to pan; cook for 30 seconds., Add beef and onion mix, together with all pan drippings, to crock pot., Chop celery, peel and slice carrots, and cut potatoes into bite-sized pieces. Add to crock pot, together with beef stock and tomatoes., Roughly slice fresh herbs. Add basil, parsley, oregano, thyme, paprika and salt and pepper to pot., Cook on low 7-9 hours, till meat is tender and veggies are cooked through., Before serving, stir in balsamic vinegar and adjust spices to taste.
