These monster cake pops are a huge hit with kids. Between the dark chocolate and frosting filling and the crazy eyeballs, these cute little monsters are hard to resist.
Ingredients: 1 12.75 ounce box of dark chocolate single layer cake (such as Ghirardelli), prepared.,1/2 can of dark chocolate frosting. ,1 to 2 pounds dark chocolate candy coating,Candy eyes,Edible ink pens
Instructions:
- Crumble the baked cake with your fingers
- Stir in half a can of prepared dark chocolate frosting.
- Using a tablespoon cookie scoop, portion the dough and form each into 1 1/2 inch to 2 inch ball.
- Place the cake balls onto a parchment lined baking sheet and refrigerate.
- Melt the candy melts in a microwave safe bowl, per the package instructions. Work with about 1 pound of coating at a time.
- Dip Wilton lollipop sticks into the melted candy and stick them about half way through the formed cake pops. Return them to the refrigerator.
- One at a time, dip the cake pops into the melted chocolate and tap off any excess.
- Let solidify with sticks inserted into a styrofoam block.
- Add the rest of the chocolate coating into a disposable piping bag, snip off the end, and drizzle the cake pops with random squiggles.
- Place the eyeballs randomly on the cake pops.
- Let dry on the styrofoam block.
