Monster Cake Pops

These monster cake pops are a huge hit with kids. Between the dark chocolate and frosting filling and the crazy eyeballs, these cute little monsters are hard to resist.

Ingredients: 1 12.75 ounce box of dark chocolate single layer cake (such as Ghirardelli), prepared.,1/2 can of dark chocolate frosting. ,1 to 2 pounds dark chocolate candy coating,Candy eyes,Edible ink pens

Instructions:

  1. Crumble the baked cake with your fingers
  2. Stir in half a can of prepared dark chocolate frosting.
  3. Using a tablespoon cookie scoop, portion the dough and form each into 1 1/2 inch to 2 inch ball.
  4. Place the cake balls onto a parchment lined baking sheet and refrigerate.
  5. Melt the candy melts in a microwave safe bowl, per the package instructions. Work with about 1 pound of coating at a time.
  6. Dip Wilton lollipop sticks into the melted candy and stick them about half way through the formed cake pops. Return them to the refrigerator.
  7. One at a time, dip the cake pops into the melted chocolate and tap off any excess.
  8. Let solidify with sticks inserted into a styrofoam block.
  9. Add the rest of the chocolate coating into a disposable piping bag, snip off the end, and drizzle the cake pops with random squiggles.
  10. Place the eyeballs randomly on the cake pops.
  11. Let dry on the styrofoam block.
