This recipe truly will work with just about any beef roast. It’s especially made for the cheaper cuts of beef roasts like a pot roast or bottom round. These cuts have marbling throughout the meat that breaks down in cooking for juicy, flavorful shredded beef. A brisket will work too, and will lead to a “richer” flavor profile.
The Italian “dressing”
When we first attempted this recipe, I cooked the roast in the dressing, hoping to actually get the Italian flavor into the meat. Instead of preparing the meat with the dressing, I decided to toss the dressing with the shredded beef after cooking.
How should I serve this Italian Beef?
Depending on your dietary desires and requires, this is an actually versatile recipe. You can keep it low carbohydrate and serve it with cauliflower rice or greens. Packed in a routine or sweet potato would be terrific too, or over some white rice. You could go the standard path and make a sandwich. Easy instantaneous pot italian beef with a flavorful italian dressing. A scrumptious whole30, Paleo and low-carb recipe that you can serve with anything!
- 4 lb beef roast( we utilized a chuck roast but a bottom round, pot roast, shoulder or brisket would work too)
- 1 onion, diced
- 1 tbsp ghee
- 1 cup beef broth
For the flavoring:
- 1 tablespoon Italian spices
- 2 tsp sea salt
- 2 tsp ground pepper
For the Italian Dressing:
- 1/3 cup avocado oil
- 1/4 cup white vinegar( can sub pepperoncini juice from container)
- 1 lemon, juice of
- 2 tsp dijon mustard
- 2 tbsp Italian seasoning
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
- 1 container pepperoncini peppers, drained pipes & sliced (12 oz container)

Season the beef cubes with the flavoring mix.
Add the onions to the immediate pot and put in the beef broth.
Place the beef back into the Instantaneous Pot and press the Saute button.
