Healthy & Delicious: Lemon Basil Pasta Salad

Recently, I posted about Avocado Chicken Salad, a damp, generally tasty summer mixture that avoids using mayonnaise for taste or binding purposes. This week, it’s another seasonal recipe that eschews the heinousness of mayo: Lemon Basil Pasta Salad. Lovely by itself or as a base for more sophisticated pasta meals, it’s a light, inexpensive option to your basic starch-based picnic sides.

The dish is adjusted from Party Line with the Hearty Boys, a program hosted by Dan Smith and Steve McDonagh, the inaugural winners of The Next Food Network Star. I have actually made a similar dish from Ina Garten previously, however it calls for two-thirds of a cup of olive oil, along with several more preparation steps. Dan and Steve developed a simpler salad in their uncomplicated lemon dressing– farfalle mixture.

It’s must be noted that Lemon Basil Pasta Salad is great as is, also. Citrusy and light, it’s solid for workplace lunches, picnics or fussy eaters. We brought it to an outdoor performance this previous weekend, and it was all we might do to keep random adults, explorative toddlers, bad canines, and marauding ants from attacking the bowl.
