Greek Lamb and Orzo

Dinner all set in 20 minutes! Enjoy this hearty lamb and pasta dish– perfect if you love Greek cuisine.

Ingredients: 1 medium stalk celery, cut into 1/2-inch pieces,1 pound ground lamb or beef,1/ 4 teaspoon ground red pepper (cayenne),1 cup raw rosamarina (orzo) pasta (3 ounces), Plain yogurt, if desired,1/ 4 teaspoon salt,2 cans (16 ounces each) stewed tomatoes, undrained

Guidelines: Prepare lamb in 10- inch frying pan over medium-high heat, stirring occasionally, till no longer pink; drain. Stir in tomatoes, celery, pasta, salt and red pepper. Heat to boiling; decrease heat to low., Cover and simmer about 12 minutes, stirring regularly, until tomato liquid is absorbed and orzo is tender. Serve with yogurt.
