I have a confession to make.

I’m not a big chicken enthusiast.

I imply, don’t get me wrong, I enjoy the concept of chicken.

Buttttttt, there’s simply something about raw chicken that seriously earns me out. It’s embarrassing to confess that, but it’s the reality!

I imply, I still cook it, of course. You may have seen that the huge bulk of chicken recipes on this blog site included currently cooked shredded chicken breast.

I am also not above simply purchasing a rotisserie chicken and doctoring it up into homemade goodness. No pity in my video game, friends.

Anyhow, lately I have actually been shredding chicken in the Immediate Pot. I simply cook chicken breasts on high pressure for 15 minutes in a cup of broth and after that let the pressure release naturally. Super moist chicken comes out of that pressure cooker. It’s remarkable!

Of course, when I’m not seeing my carbohydrates, this is pretty divine inside a couple pieces of white bread. And yes, I totally dip Ritz crackers in this things every chance I get. It makes for an enjoyable and filling lunch!

Loaded Chicken Salad

This is a conventional chicken salad dish that’s packed with pickles, onions, pecans, and juicy chicken! It makes a terrific low carbohydrate chicken salad if you serve it in a lettuce wrap or just consume it with a fork!

  • 2 cups prepared shredded chicken
  • 2 boiled eggs chopped
  • 1/4 cup sliced dill pickles
  • 1/4 cup chopped pecans
  • 1/4 cup diced yellow onion
  • 1/2 cup mayo
  • 1 teaspoon yellow mustard
  • 1 teaspoon hot sauce
  • 1 teaspoon white vinegar
  • 1 teaspoon fresh dill
  • Salt and pepper to taste


  • Include everything to a medium mixing bowl and stir well to integrate.

  • Function as a dip for chips, spread on bread for a sandwich, or keep it low carbohydrate and enjoy in a lettuce wrap or on a fork.
