Ingredients: 2 cups arugula,1 cup beef broth,3 1-inch-thick beef tenderloin steaks,4 tablespoons (1/2 stick) butter, divided,4 big croissants, cut in half horizontally, lightly toasted,1/ 4 cup ready white horseradish,1/ 2 cup mayonnaise,3 medium onions, thinly sliced,8 ounces big shiitake mushrooms, stemmed, caps thinly sliced (about 5 cups)
