Chicken Enchilada Bake

We were doing so good. Jackson has been doing his business outside like a champ. But this morning, he decided that standing next to the door was good enough. I’m pretty sure he’s been holding that amount of pee in for at least a week. He’s about 13 pounds and now he’s probably 6 pounds. That guy.

I’m real excited. My favorite blogger, How Sweet It Is, finally has her first cookbook for preorder. Let me preface something: she is not a paleo blogger. Not even close. But she has incredibly creative recipes and the best photography ever.  And she’s funny. Funny women are the best. I’m absolutely preordering her book just so I can stare at the pictures.

I’ve thought something was a bit funny at instagram lately. So whenever I post a picture using Against The Grain Gourmet rolls, people get all upset because they have cheese in them. And if my instagram name is paleomg, I should post only strict paleo foods. BUT when I post any sort of dessert like chocolate or my cupcakes or anything sweets related, NO ONE ever complains. I think it’s the strangest thing.

Just to spite those people, I put goat cheese on this recipe. What an ahole I am.

PS I’m typing this blog post with one hand because Jackson refuses to calm the sh*t down. So I’m shoving his bone in his mouth to try to keep him calm. It ain’t workin’.

On a complete different subject, I’m dreaming about a vacation. I have some weddings this summer and I’ll probably spend a lot of time on the lake, but I need a beach vacation come fall. I’ve been quite intrigued with the thought of going to the Florida Keys and Key West. I’ve heard that it’s pretty expensive, but it looks like one of the most gorgeous places. Has anyone been there? I want to know more about it, but from people instead of just the internet. Tell me things. Did you love it? What was your favorite place to stay? What did you do there? Are you a million?

Chicken Enchilada Bake


  • coconut oil, for greasing baking dish
  • 1 pound cooked, shredded chicken (I used a rotisserie chicken)
  • 1 (14 ounce) can El Pato enchilada sauce
  • 1 (6 ounce) can of diced green chiles
  • 1 orange bell pepper, seeded and diced (or any color you like)
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • salt and pepper, to taste
  • 3 eggs, whisked
  • cilantro, to garnish
  • goat cheese, to garnish (optional)


  1. Preheat oven to 350 degrees. Grease an 8×8 glass baking dish.
  2. In a large bowl, add shredded chicken, enchilada sauce, green chiles, bell pepper, onion, garlic, chili powder, oregano, and salt and pepper. (feel free to be generous with the salt) and mix well.
  3. Then add eggs and mix well to incorporate.
  4. Pour mixture into baking dish.
  5. Place in oven and bake for 1 hour and 15 minutes. Check at 1 hour to see if eggs have completely cooked through and cook extra 15 minutes, if needed.
  6. Let rest for 5 minutes then garnish with goat cheese (optional) and cilantro.

        1. I just went and looked at this website and loved it. I have a couple pairs of Lulu’s, but they’re just so expensive! And it’s a pain to wash workout clothes over and over. I just made my first order! I’m excited for it to come in!

    2. Try lululemon “In the Flow II Crop.” They have wide waist bands, aren’t sheer and the material is great. They are snugger than wunder unders, but due to the wide waist band there is no worry about the dreaded muffin top.

    I used to be stationed in Key West. It’s not as nice/fancy as the pictures make it to be. There are no waves, the water isn’t very blue. It is very run down. It’s a tourist trap and your right, its expensive. Not worth the price. But hey, if you really want to go, go for it! I would suggest staying in a B&B to get the real Key West feel, not one of the hotels. Have fun if you do decide to go!

    1. I 100% agree with Megan. When they say the FL Keys really the only one worth going to is Key West there is nothing in any of the other cities. It is also run down, expensive and there are no good beaches, no sand, the beaches are rocks. You could pick somewhere so much better. I have been there twice once by my choice and once for a wedding and both times I said I would never go back.

    2. Lots of valid comments about Key West but we love it there and it’s a great getaway from the harsh New England weather. We stay at the same place when we go: The Orchid Key Inn and it’s truly a slice of heaven. Juli – I love your site and every recipe I’ve tried has been great.   4. Key West is the best! Pricey once I got home and I reviewed my bank account and saw ALL the bar tabs, I’d try to rent a house and bring more alcohol rather than pay Duval St prices. Brunch at Blue Heaven, Bloodies at the Green Parrot – scooters, hula hoops, roosters and hemingway cats. Go, go right now!

  10. We love Key West! There’s some great history there and if you stay in the older section you can walk everywhere. We’ve stayed at the Key Lime Inn and Orchid Key Inn (both awesome, both expensive, as most Key West hotels are). We did a day with Danger Charters (snorkeling, kayaking, sailing), a bike tour with Key Lime Bike Tours, a sunset cruise with Sebago, and went stand up paddleboarding with SUP Key West. Good food, drinks everywhere. Very fun town! If you want to lay on the beach though, it’s not the best choice. Parts are overly touristy (cruise ships coming in regularly), but if you do some research there are great options there.

  11. I was born and raised in South Florida, so the Keys were never too far away. My parents used to talk about how the secluded majesty of the Keys has been overrun by commercialism and tourists, but we would still drive down there once in a while. Tip: I stayed in an awesome two-story house on sticks with a wraparound patio on the water in Islamorada. It’s one of the Keys, not as far down as Key West but not as pricey either. Then, you can just drive down to Key West for the day/night, go to Sloppy Joe’s, watch the sunset in Mallory Square, eat key lime pie, etc.

  13. UGH yum!!!! I put some chicken in the crockpot this morning because I’ve been craving some shredded chicken. I totally know where it’s going tonight… Into this recipe, of course!

    Also, I’ve been to Sanibel Island a few times, but it was when I was younger so I don’t have any deets on where to go or stay. I just remember there was plenty to do and it was beautiful!

    Anyway, if you are looking for a great beach vacation, you must check out Destin, FL. It is on the gulf coast, but it is the prettiest white sandy beach you have ever seen. I’ve been a few times with family and it is very reasonably priced. We rented a house in a gated community for super cheap and had its own private beach entrance. Definitely check in to it.

    1. I agree with Chelsea, Destin is gorgeous! I live in Louisiana, and that’s where most people around here go on beach vacations. I’ve never been to Key West, so I can’t speak for it. But definitely look at Destin!

  15. Key West is amazing and I am super poor! I stayed there with a group after a Ragnar race and had so much fun. There are chickens (and roosters, crowing roosters at 5 am) everywhere, I think it is a chicken sanctuary.

  16. I consider Key West for the 20-somethings that have graduated from Cancun!…oh wait, that’s probably you! lol! I think the prior posts are all good. And just to reiterate, there is one tiny beach in key west, mainly used for weddings. So I recommend going elsewhere if you’re looking for a beach. The idea about going to one of the other keys and visiting key west is excellent!

    Now let’s say your book jumps to a #1 best seller (because we know it will) and you get a massive bonus or win the lottery, etc….check out littlepalmisland.com!

  17. Key West is awesome. Get a room with a kitchen on Duval Street and bring in your own booze. You can make your own drinks (no open container laws) and stop in the bars occasionally.

  20. So, I love Key West, however, I hate the beach so it was no problem for me that there wasn’t really a beach beach. I just actually moved here to denver from florida so I’ve actually spent quite a bit of time in Key West and I do think it is a place everyone should go at least once. It has changed a lot though. There’s a lot of cruise ships that stop there now and that brings a lot of annoying tourists. There is some good food there though. There’s a cuban place that’s super authentic and delicious. There’s also a cf gym there now so you could try it out. I think it’s crossfit bones… Anyways if you go i would highly recommend going to the dry tortugas (gotta book early cuz they sell out). Do not go snorkeling, it’s a huge waste of time there but there’s a lot of booze cruises that you could go on. Also, i def recommend staying at a B&B close to Duval street (that’s where all the fun is and u can easily stumble home). I’m sure there’s more I can recommend and say but i’ll stop there.

  22. I LOVED Key West! My husband and I went there on our Honeymoon and it was lovely. We aren’t the biggest “beach lounging” people, so we did a ton of activities – snorkeling, dinner cruises, etc. We rented scooters and took a tour of the island. Blue Heaven is a must stop for the best key lime pie. There is also a lot of history on the island – lots of fun to explore!

    Key West is nice, but if you are looking for nice beaches, try the 30A beaches in the FL Panhandle…..much nicer beaches and fun, good vibe. Grayton Beach, Rosemary Beach, or Orange Beach are all really nice quaint, village-y places!! And an easy drive from either, NOLA, Atlanta, or Mobile, AL.

  25. We just got back from vacationing in Marco Island/Naples! It was beautiful and soooo relaxing! All the young birds (55+) leave after Easter. Marco Island is down home, down the street. Even though it attracts tourists year round, it has not become commercialized like most places. We rented a condo on the beach which is waaaay cheaper than staying in a hotel. We rented kayaks, fished, and took a few booze cruises (cool beans cruise is so fkn fun! Check it out before the bugs and humidity roll in 🙂

  27. Key West is my happy place. I strongly suggest going — I also strongly suggest flying into Miami and experiencing the drive down the keys. Easily one of the most memorable moments for me and what I think of as “old Florida.” Yeah its touristy due to the cruise ships – but stay at an old B&B near Duval, walk the city, and hit all the good bars. The beaches are a bit harder to come by, but Sunset @ Mallory Square is something everyone needs to experience in their life.

    This is my first comment, but I read your blog daily (and watch your wonderful haters on instagram). Every recipe I’ve tried is a keeper. Thanks for being awesome – can’t wait to try this one!

  29. I’ve been to Key West and I loved it! Be prepared to eat and drink a lot. I wouldn’t say the beaches were the best, definitely stay somewhere with a pool. My Mom and I do an annual Mother/Daughter trip. Well we didn’t realize we had booked our trip a few years ago during Fantasy Fest! Talk about an awkward few days with my Mom… good thing we appreciate lots of naked people walking around 🙂

  31. Key west is amazing. I’m getting married there next year and my parents have had a timeshare there for almost 30 years. It’s beautiful. Like being in the Caribbean but still in the US. Very laid back atmosphere and AMAZING food everywhere. Driving down through the keys is beautiful and cheaper but I’m lazy and prefer to fly right in to key west. It’s paradise. Email me if you need more information or want restaurants to try or things to do! Like I said my parents have been going forever and my fiancé is a chef so spend a lot of time eating.

  32. I love Key West! I second someone’s earlier recommendation for the Orchid Key Inn- my husband and I stayed there last February and loved everything about it. My absolute favorite thing about Key West is La Creperie. Best. Crepes. Ever. On a Miami girls trip a few years ago we drove RT to Key West just for crepes- they are that amazing(and wayyyy better than Blue Heaven, IMO). Also super good- Paseo. Their fire roasted corn on the cob is soooo good. We didn’t even go to the beach, just hung out at the pool, so that was a non issue for us. Having done it both ways, I’d recommend flying into MIA and driving down to Key West. The drive through the Keys is beautiful- and I enjoyed it so much more than the little puddle jumper plane.

  34. Key West is thee BEST!!! They have great oyster bars and dive bars everywhere and usually some decent price drinks for ladies. The water is warm too. Aww I miss the keys! I’m in North Florida now, so going down south is a treat really.

  35. Yum this looks amazing. I am fairly new to the paleo thing and your recipes are really making the transition easy! (I am addicted to your paleo pizza!). Tonight I made pork (cushion) in the crockpot with diced green chilies and some deli jalapeños. I was feeling sorry for myself that I couldn’t have sour cream or beans, but then I decided to make some mashed cauliflower and the combination was delicious. Thanks for the inspiration!

I am fairly new to the Paleo lifestyle but your website has made my transition an easy and enjoyable one. I realize not everything is ‘strict’ but every recipe I come across is FAR healthier- and tastier than the foods I used to eat, and that is an accomplishment in itself. I will be honest, I am new to cooking as well. I used dine out… ALOT. That being said, when you use a rotisserie chicken, does this mean I can use the little Simple Truth pre-cooked chicken in the bag near the deli at Kroger? Will the recipe turn out the same if I leave out the meat from the legs?

      And I have been to Key West but it was just a stop we made during a cruise I took a few years ago, so I only saw a fraction of what it has to offer. I will say I enjoyed going to a few small museums they had there, very interesting. And yes of course we went to a few bars, too. It was fun and the culture is interesting.

    I’m from Miami and go down to the Keys/Key West all the time.. Keep in mind they are both different from one another.. But if you want to come visit, the summer is definitely the time to do it. The Winter is the busy/expensive season because it’s when all the Northern Birds come down. I don’t know if you’ve ever been to Miami but Key West is quite literally the opposite vibe.. It’s really laid back and inexpensive. There’s great food too! It’s totally acceptable to drink all day, everyday and wear flip fops and shorts to a bar at night. One of my favorite places, ever.   37. Go to the Florida Keys! Right now! Key Largo+ West have been our family’s traditional vaca spot for the past 20 years, (mainly becuase we’e Cuban, Awesome food too, another plus about it! but I digress.) It IS like a trip to the Carribbean, but without the price and chaulastrophobic air plane seats.

    Plus, the Keys are not as much as a tourist attraction like Daytona or Miami, soo there’s hardly ANY crowd.The ambiance is exteremly chill, like Margaritas and bare feet kind of chill. En route to Key West, we ALWAYS stop and pose lat the old 7 Mile bridge they blew up for that one movie back in the 1980’s..somethiing with Arnold probably…

  38. Even though I’m a Floridian, AND we live by the beach my husband and I still loooove tropical/beach vacations. Sure Key West is touristy and can be expensive depending on where you stay and what you do, but it was fun and I’m glad we went. We stayed at Pier House Resort & Spa because they actually have a little strip of private beach which was nice 🙂 There are lots of great dive bars and yummy restaurants to try. One of my favorite meals was brunch at Caroline’s — I had a shrimp po boy with a bloody mary — hey it was vacation 🙂 We also had to hit up Kermit’s Key Lime Shoppe for a seriously bad cheat meal — a piece of chocolate covered frozen key lime pie on a stick — INSANE!! We also did a snorkeling excursion on a catamaran which was fun! And of course we did some of the tourist stuff: Hemmingway house, Sloppy Joe’s, Hog’s Breath Saloon, etc..

  39. We are going to Ft. Lauderdale in a couple weeks. It seems like a great deal, with lots of reasonably priced hotels and cheapish flights. It’s also supposed to have great beaches! We’re thinking about renting a car and driving down to the Keys one day cause I’ve always wanted to see the Keys. Plus I really want to drive on that highway through the ocean!

  41. Key West is AMAZING! You will have an awesome time. Flights are a little pricey and depending on when you go lodging can be a little higher than other times! But it is worth it. Totally!! There are so many fun places to go and things to do. There’s an awesome sunset cruise called Commotion on the Ocean with live music! Lots of fun bars/restaurants and the best drag show I have ever seen (so fun, if it’s your thing). Very laid back and just awesome. But, the one hangup is the beaches are not the big crashing wave type beaches, they are the more quiet, calm beaches. The best one is Fort Zachary Taylor Beach. You have to pay to get in, like $5, because it’s a National Park, but it’s worth it! And if you go rent bikes one day and ride around the island! So fun!!

  45. I live in North Central Florida and love going to the Keys. A cool thing to do would be to fly in to Miami and then drive to Key West. The drive is AMAZING and beautiful, takes about 3 hours without stopping but you’ll want to. There are plenty of cool little restaurants, bars and scenic views along the way. The down side to that is you don’t really need the car once in Key West because it’s so walkable. You could fly into Key West but it’s a regional airport so it will be more expensive.

    For a day trip from Key West take a boat or sea plane to the Dry Tortugas for a picnic and snorkeling trip. Some of the best snorkeling for sure.

    Then of course do the ‘Duval Crawl’ (bar hopping along Duval Street) and eat Key Lime Pie.

    If you want to fork out the big bucks for a hotel you can stay on Sunset Key which is a tiny island just off Key West that you take a quick little ferry to. I’ve never stayed there but seen pics and it looks pretty awesome.

  50. Why do you recommend El Pato specifically? Does it have clean ingredients or is that just what you prefer when you don’t make the sauce yourself? I am not sure I have ever seen it.

  57. I made this last night and cut it into portions for my husband and I to use throughout the week. I was super excited that I bumped into the El Pato sauce at my local Wal-mart so I wouldn’t have to make my own homemade batch. I added a little fresh cilantro into the mixture before I baked it and added a seeded jalapeno as well for extra heat. Next time I am going to triple the recipe so I can portion and freeze some of it. Very delicious, healthy, and simple…what more could you ask for? 🙂

  58. Just made this for the BF this weekend and baked it with a shredded cheese topping instead of the goat cheese. Had to double to recipe so it would last at least two days. Made some guacamole and plantain chips as a side. Huge hit!

  59. Islamorada over Key West any day – The Cheeca Lodge is gorgeous, or the Islander Resort, which is a bit more economical, is a lot of fun, too. The Keys are the only place I feel truly relaxed. We are going Labor Day weekend and I can’t wait!

  61. I think I only saw one comment about the Dry Tortugas. That was a trip highlight for my family. It is only accessible by boat and is home to Fort Jefferson. How cool is it to have a fort in the middle of the ocean like that? It was also used as a prison and Dr. Mudd (the one who assisted John Wilkes Booth) was sentenced there. Fun and interesting day trip. Otherwise I just love Key West for the food–El Maison de Pepe is our favorite (Cuban) and the ropa vieja–literally dirty clothes is the best and you can totally paleoize it by removing the peas–hmmm maybe a future recipe????

  69. Ok… just back from Key West… it was GORGEOUS!

    Here are my opinions on the things we did/were told to do:

    1. eat at “Better than Sex”… it’s a dessert only restaurant. Now, while the experience was fun (restaurant is dark/candlelit, they have drinks dipped in chocolate) in my opinion the dessert wasn’t all that, I’ve had better… and they seemed to be pre-plated, etc. We ordered and less than 2mins later food was in front of us. Just made me feel like they had a costco supply of desserts in the back vs a real pastry chef. It was also expensive – we dropped $60 and were in and out in under 20mins. My suggestion… pass up this place, or maybe just go for a chocolate dipped cocktail

    2. Le Croissants de France – yummy pastries! Bfast sandwiches, not so much. But if you go next door to the Bistro (I believe they’re co-owned) try the toffee banana pancakes! They don’t need syrup – they are fantastic!

    3. Southernmost Bar & Grill (I think that’s the name of it – it’s at the southernmost beach)… this was by far our favorite spot! Great view, right on the water with a small beach… and best drink I had all week was called Horny Parrot… try it

    4. Garden of Eden – lmao… this is a clothing optional bar on a rooftop… we went for 5mins, had a good laugh and left. PS. don’t sit on anything there… there really are naked people and they have no qualms about sitting on a bench or stool in their bare tushies.

    5. Cuban Coffee Queen – great cuban coffee. Other people we were there with also said they had the BEST cuban sandwiches… we didn’t get a chance to try those but I believe it. However, be prepared to wait… it’s a small shack and I waited 20mins just for a coffee. Worth it though! Just don’t wait til you’re starved to get in line 🙂

    6. Butterfly Museum… if you have a cloudy or rainy day… stop in here. There’s no way you’ll leave anything but happy and grinning from ear to ear. My husband didn’t want to go here… but once we were inside, I practically had to drag him out. Just a cool experience

    Well I could go on and on… but I’ll spare you! Enjoy it!

  70. I recently heard of this thing called Airbnb. They rent out houses and apartments. The hotel industry says they are starting to affect their business. My friends used it on their trip Europe last year. It is becoming more popular in the U.S. and Key West is touristy enough to have some locations.

  72. Try Siesta Key in Florida instead of Key West. The water is prettier, the beach is nicer, it’s not quite so touristy, it’s probably cheaper, too.

  76. This recipe is totally amazing!! I was skeptical at first bc I’m not a huge fan of prepping meat with bones (a big problem when attempting a paleo diet, I know) like a rotisserie chicken has. But it looked so good that I manned up, prepped the chicken and boy am I glad I did! This is definitely going to be a repeat recipe for me.

    I couldn’t actually find the el pato enchilada sauce called for in the recipe, and had to use a substitute (which was difficult– finding a paleo-friendly sauce, that is!). Where might I be able to find that particular brand? Is there a good substitute that anyone can recommend instead?

  79. This recipe is the BOMB and affordable! I got a rotisserie chicken at Earth Fare for $5, it’s their new $5 daily deals (THE. BEST.), shredded that sucker and added all the other goodies. I used half a can of jalapenos for a little more spice and it was perfect.

    I packed this for my boyfriend’s lunch with organic blue corn tortilla chips, basically turning it into nachos, and he LOVED it! I will definitely be making this again! Keep up the awesomeness!

  84. How many cups is a pound of chicken? I put in 2 1/2-3 cups and it ended up more like an egg casserole with chicken 🙁 not what I was looking for but it did taste decent. Also mine was a runny…any suggestions?

    1. That sounds about right. Make sure you drain the can of chills and cut the eggs back to 2 if you felt it was too much egg

  85. This was easy and so yummy! I ended up just buying a couple of chicken breasts and baking them in the oven before shredding them. let me just say.. adding the cilantro and goat cheese made this 10 million times more delicious! I’ve started putting goat cheese on everything actually. The only downside was that my chicken was a tad tough but that was obviously my bad and not because of the recipe.

  86. I made this tonight and it was really delicious. I cooked the chicken breasts in a slow cooker and then shredded it. This was super easy and it was really nice garnished with goat cheese.

  87. Made this last night and it was delicious – I did have to cook it for an hour and 20 mins and let it set – but not runny at all. My husband and I had to resist eating the whole thing. We ended up skipping the goat cheese and using sour cream!

  88. PaleOMG is right. Honestly thought I was going to stand there and eat the whole entire pan. Piping hot. Scalding my mouth. I didn’t even care. I ended up using only 2 eggs after reading the reviews. Spread it a little thinner in a 13″ x 9″ pan and it cooked perfectly after an hour. Couldn’t find El Pato enchilada sauce… I found literally everything else El Pato has ever made except their enchilada sauce so I used Frontera(?) instead. The ingredients and nutrition information was almost the exact same. Thank you so much for your recipes. They have yet to steer me wrong!

    1. El Pato’s ingredients are Tomato Puree, Water, Chiles, Onions, Garlic, Citric Acid, Oregano, Salt and Spices. If you don’t want to eat that you’re welcome to improvise.

  93. Mine was way too watery as others have commented, the enchilada sauce maybe was too thin, who knows. It tasted good but I wasn’t in LOVE with it like my friends. Definitely will try to tweak it a little bit next time! I also only used two eggs.
