In case you have not heard, Indian food is fantastic! The jam packed flavors, the spices, bread and oh, naturally. the perpetuity timeless, chicken curry. It’s an extremely hearty and appetizing dish filled with a big quantity of flavor. Like, lots of flavor!
Certainly, everybody wishes to attempt exotic tastes eventually in their life; it may take some of us longer than others, but at some time in our lives we wake up and state” Hey I’m going to have Indian food today”.
A long time ago I never made chicken curry at home because for some odd reason, I assumed they only make chicken curry in Indian restaurants … Ridiculous me. Perhaps it’s since that’s the only location I ever seen it. When we resided in Brooklyn, there were Indian restaurants all over and if you were strolling down 5th ave there’s no way you can walk by an Indian dining establishment without stopping to either inhale the amazing fragrance or peek through the window and see what all the difficulty is about.
If this is your first time making Indian food do not fret. This dish is super easy and does not require a bunch of steps. All you need to do is processor all the spices, tomato sauce, yogurt and water in the food processor; cook the chicken and onions and than blend all of it together and let it simmer for 25 minutes.
Easy Chicken Curry
Prep Time: 5 minutes
Cook Time: 25 minutes
Overall Time: 30 minutes
- 2 Cups boneless chicken breasts or thighs cut into chunks
- 2 Tablespoons olive oil
- 2 onions diced about 1.5 cups
- 1/2 cup water
- 1/2 cup plain yogurt or whipping cream
- 1 cup tomato sauce or 2 tablespoons tomato paste
- 4 cloves garlic
- 1 Teaspoon cinnamon or 1cinnamon stick
- 1 Teaspoon dry chili
- 1 Teaspoon turmeric powder
- 1 Teaspoon salt
- 5 Cardamom pods or 1/4 teaspoon nutmeg
- 5 whole cloves
- chopped fresh coriander leaves cilantro
Blend spices, garlic, tomato sauce, water and yogurt in the food mill for 1 minute. Pulse a couple of times in between so the batter is not too runny, reserved.
Sauté onion in oil for 2-3 minutes till they begin to turn golden in color, include chicken pieces, continue cooking till onions are transparent and tender and chicken is reasonably well-cooked.
Pour spice/tomato mix over the chicken and onions and give a boil, stirring well.Simmer, covered, stirring occasionally till chicken is tender for about 25 minutes.Serve hot, garnish with fresh coriander leaves.
