LAMB – Remove your lamb rib chops from the refrigerator about 30 minutes before cooking. Letting your lamb reach room temperature allows the meat to relax, compared to when it’s cold, it tenses up. Lamb is a meat that cooks quickly and can dry out easily, therefore it’s best to have it at room temperature so that it evenly cooks.

  1. Preheat oven to 375 F.
  2. Whisk all ingredients (except lamb chops) together in a bowl.
  3. Using gloved hands, massage oil and spice mixture all over both sides of the lamb chops.
  4. Heat a large (dry) oven proof skillet over medium-high heat. Once the skillet is hot, add the lamb chops.
  5. Sear chops on one side for 3-5 minutes. Turn chops over and sear another 2-4 minutes.
  6. Place skillet in oven, uncovered, and bake for 10 minutes (for medium rare).

    EXPERT TIP – Lamb is best when cooked to medium-rare, but if you prefer medium increase the time in the oven to 15 minutes instead of 10.

  7. Remove from oven and transfer chops from skillet to a cutting board and tent with foil. Allow to rest for 5 minutes.
