It’s not that I believe salads are lame, it is simply that I do not want to discuss the “stereotyped Monday salad”. I am just not feeling it. What I am truly feeling is all the cozy foods, however that is only because our weather condition is imitating it is LATE fall.
Ya, you check out that right. Late fall. Ugh.
Oh well, I am privately caring it.
Other than not truly because our crazy Colorado weather suggests that there are darkest clouds one minute, then all of the unexpected blue skies, then back to dark clouds once again. And that can all occur within minutes!
Anyhow, this beef. Especially ground beef, but for some factor I desired to cook with beef a couple of weeks back.
I have been keeping this dish for too long and I am sorry. The important things is, when I really enjoy something I like to “conserve” it for the perfect time. I used to do this all the time with new clothes, waiting to wear them till just the right day and now I guess I am doing it with my recipes. It’s totally stupid, but for some reason this is something I have always done.
Now you are probably thinking, is there something unique about this Monday? Nope, I just felt bad hanging onto this for so long and figured it had to do with time to share one of my favorite recipes with you.
And it truly is among my preferred recipes.
It’s extremely quick (umm, hey there twenty minutes !!), easy and a meal that my entire family will eat … with no complaining at all. Yes!!
Oh, and it goes without stating that it is delicious, but I feel like I say this everyday.
Truly however, my entire family consumed this and loved it. The kids returned for seconds and to be honest, there truly wasn’t even adequate for everyone. Certainly absolutely nothing left over for lunch they next day, which they obviously grumbled about– they constantly need to have something to grumble about. Given that there are nine individuals at my dinner table a couple of pals, I doubled the recipe, however I think I underestimated their beef consuming powers. The kids basically jump for joy when I make things with asian flavors, however especially beef. Beef is their thing. My oldest sibling Creighton attempts to live off beef, which completely revolts me, however he is a real American person.
His motto is something like, beef all the way– all the time. If you ask me, he requires some veggies … shh, do not inform him what actually goes into that enchilada casserole he likes so much.
Ok, so whatever about this 20 minute Thai basil beef is easy. You make some rice and toss in a little lemongrass for some fresh taste. While the rice cooks, stir fry the beef. The beef truthfully will take you ten minutes tops. It is so fast and the factor it is so delicious is because of all the fresh basil. I freaking love basil (excuse my freaks).
It’s probably my preferred herb to use.
Given That this takes just twenty minutes, it is the best meal for hectic nights. With school beginning and life getting all serious again I feel like this is going to be your new favorite meal. Or a minimum of I hope so.
I imply, if you like Thai tastes, basil and rice then I believe you’ll enjoy this. If beef is not your thing attempt swapping ground chicken or pork. For vegetarian eaters, I make sure crispy tofu or tempeh would be so great!

Thai Basil Beef
- 2 large carrots cut into matchsticks
- 4 infant bells peppers sliced
- 1 hot red peppers sliced
- 2 green onions chopped
- 1 tablespoon fish sauce
- 1/2 teaspoon honey
- 2 tablespoons sesame oil
- Juice of 1 lime plus lime wedges for serving
- 4 cloves garlic minced or grated
- 2 teaspoons fresh ginger grated
- 1 pound lean ground beef might utilize ground chicken or pork too
- pinch of black pepper
- 1/3 cup 2 tablespoons minimized salt soy sauce divided
- 1/3 cup sweet thai chili sauce
- 2 cups fresh basil leaves sliced or sliced, plus extra for serving
- Toasted sesame seeds chopped roasted peanuts for serving
While the rice is cooking, make the beef.
Heat a large wok or heavy bottomed skillet over medium heat.
Divide the rice among the bowls, top with equal quantities of beef.
